There is hardly any tea that comes in as many different varieties as Tie Guan Yin. It is an oolong, but then it is unclear .... It can be dark or light, floral or fruity. It depends on both oxidation and subsequent roasting. These slightly darker varieties are called "traditional".
This is still a relatively light tea with a taste reminiscent of crispbread or Genmaicha, slightly sweet with a roasted flavor. It is typically brewed in small, small cups with lids. Lots of leaves, and little water, but then many brews on the same leaf. As the leaves unfold, the flavor changes.
