Green tea is the most common type of tea in China, and the meaning of the word "tea" is normally "green tea" in the country where it all started. The variety is vast, regardless of we are talking about appearance, taste or price, and each district has its own favorites and traditions.

In general terms, green tea in China is harvested in spring, the earlier the finer. Picking by hand is still quite normal, and the most common processing involves firing in a wok pan. By heating the leaves, a natural enzyme in the leaves is destroyed, which prevents further oxidation of the tea leaves. Green tea is full of antioxidants - compounds which are thought to be important for the immune system.
