Yellow tea - a tea of its own

Yellow tea has a taste that differs from that of green tea, often with a mellow sweetness. The manufacturing process is similar to that of green tea, but after the first firing, the leaves are wrapped in a special paper/cloth. The still moist tea leaves undergo a slow oxidation. This so called piling is repeated several times, after which the tea leaves are dried. By then, the leaves (or tea buds) have turned pale yellow.
In Europe, yellow tea is probably the least known kind of tea.
