Rooibos is naturally caffeine-free - also known as red tea

Rooibos is the perfect evening drink, warming and caffeine-free. Rooibos is made from a shrub that grows only in South Africa, and has nothing to do with the tea bush. Its Latin name is aspalathus linearis. Nowadays, it is produced by finely chopping the leaves, which are then allowed to oxidize. During the process, the color changes to deep orange-red. Due to this, rooibos is also known as 'red tea'. There is also green rooibos, which has some similarities to green tea. This is the older way of producing rooibos, as the leaves are still unoxidized. As early as 1772, the Linnaeus scholar Carl Peter Thunberg described the practice of drinking rooibos during his visit to South Africa

Brew rooibos with boiling water and let it steep for five minutes or longer. It has no bitterness, so it can withstand long steeping times. As it is quite crumbly, you may need a fine strainer (or tea bags that you fill yourself), so you don't have to strain it with your teeth.
