Tie Guan Yin Jade

A lovely spring tea from China. Our light Tie Guan Yin (also written as ti kuan yin) is grown at high altitudes and is lightly oxidized. The leaves are green and glossy. The pale yellow infusion is freshly floral with a subtle fruity sweetness. Even after many infusions, it maintains a long finish. This is a tea that is very easy to love. Tie Guan Yin has a history of at least 200 years. It comes from Anxi in the Chinese Fujian province. Conditions here are perfect for tea cultivation, which may explain why TieGuanYin has become so popular. There is also an old legend about a man who cared for a dilapidated temple dedicated to the "Goddess of Mercy of Iron" (in Chinese: tie guan yin). As thanks for his devotion, the goddess told him that the reward for his good deeds lay behind the temple. There he found two tea plants, from which he began making this tea...
