A type of tea that has become especially popular in Japan and Taiwan.
Normally, oolong is allowed to oxidize, ie react with the oxygen in the air. In this case, the process has taken place in an environment rich in nitrogen, and poor in oxygen. A process that was discovered in Japan in the 80's. Then extra GABA is formed, one of the brain's most important neurotransmitters. It also affects the taste, as it also increases the proportion of esters in the tea leaves. GABA-enriched foods are popular in Japan, as GABA has a relaxing effect. Whether one can really take GABA out of food, however, is disputed.
