Japan has a long and refined tea tradition. When people talk about tea in Japan, they usually refer to green tea. The process is usually slightly different from the Chinese tradition - in Japan, the tea leaves are steamed after harvesting. This gives it a lush green color and a fresh, grassy flavor.

The teas are

• Sencha- the name simply means "tea for brewing", and is a very common type of tea.

• Gyokuro - means "pearl dew", and is the finest type of green tea. The bushes are shaded 1-2 weeks before harvesting, so that they develop an even deeper flavor.

• Kabusecha - semi-shaded tea; more robust than gyokuro, sweeter than sencha.
Kukicha - here the leaves have been left behind. This gives it a lower caffeine content and a very fresh flavor.
