The first snow

We first made this delicious soft cake in 2010, but it's so popular that we thought it was time to share the recipe again. It's easy to make, and should be on every tea lover's baking menu. Coconut on top of green tea icing looks lovely, and certainly reminds us of when the first snow falls on the lawn...

For the cake:

150 grams of butter
2 eggs
3 dl sugar
2 tsp vanilla sugar
1 tbsp Gastro Matcha (Japanese matcha powder)
2 tsp baking powder
4½ cups wheat flour
1½ cups milk or green tea

 

For the Glaze:

75 grams butter
1 tbsp Gastro Matcha (Japanese matcha powder)
2 teaspoons vanilla sugar
3½ cups icing sugar
100 grams coconut flakes

 

  • Melt the butter and let it cool.
  • Whisk the eggs and sugar until white.
  • Mix the baking powder into the flour.
  • Add the rest of the ingredients and mix until smooth.
  • Pour into a greased pan, and bake for about 15 minutes at 175 degrees, and let it cool slightly.
  • Melt the butter for the glaze. Then add the rest of the ingredients and stir the icing until smooth.
  • Spread the icing on the cake. Sprinkle with coconut before the icing has set.
