Matcha is at the heart of Japanese tea culture. In the last few weeks before harvest, the bushes are covered, either with a cloth or a simple roof (similar to Gyokuro). A variant that has become popular recently is the matcha latte: Heat 2 dl of milk in a saucepan. Put 1 tsp of matcha powder in a glass. Pour in some of the milk and stir out the powder, before adding the rest of the milk. Can also be flavored with ½ tsp vanilla sugar.From the 2022 harvest.
