Breakfast tea is a category of its own, meaning strong black tea to wake you up in the morning. There are a few different stories circulating about its origins. Royalty and a Scottish tea maker are implicated, but reliable sources are hard to find. In any case, in the 19th century a number of different blends were created to suit the water used for brewing. This may seem like an exaggeration, but the fact is that hard water dissolves flavorings less well than soft water. (Think of how it's harder to wash clothes in hard water.) Therefore, harder water tends to require stronger teas, such as Assam, some Ceylon and African teas. Both the south of England and most of Ireland have hard water, so these varieties are strong. In Scotland, the water is soft, as is the municipal water in most Swedish towns, and so there are better opportunities to brew aromatic teas. This is therefore a blend that is both full-bodied, floral and aromatically sweet.
