Various citrus fruits are popular as flavoring agents, as they naturally give an intense taste. In Yunnan province, there is a tradition of filling pitted small citrus fruits with tea that is allowed to ferment. This gives the tea a mild citrus flavor. Oil from lemon, lime and orange peel is relatively easy to extract, and has long been a standard item on the shelves of well-stocked tea shops. Another citrus fruit, bergamot, is what gives Earl Grey its characteristic flavor. It is so common that when bergamot is used in the perfume industry, many people think it "smells like tea". Nowadays, in addition to bergamot, other citrus fruits are also used in Earl Grey.

By producing flavorings, the only limit to the flavors that can be produced here is the imagination. Often they try to mimic flavors that may be difficult to produce naturally. The oil produced from lemon, for example, contains a lot of flavor. It is not possible to produce a similar oil from strawberries. If you want to make natural strawberry aroma, you have to boil down huge amounts of strawberries to extract a little bit of flavor. The difference in intensity is usually said to be 1000 times or more!

In the 1970s, the idea of flavoring tea with manufactured aromas was discovered and the market for flavored teas exploded. Strawberry tea and rhubarb cream are still popular and are being discovered by new generations of tea drinkers.

A classic flavor, if you can call it that, is chai. India has a long tradition of spicing its tea with cardamom, ginger, pepper and other spices. This is called Masala Chai, which means "spiced tea". It's a bit like "mom's meatballs", with local recipes, all of which are of course the best in the world! Masala Chai is a bit too long for us to say, so we'll shorten it to just chai, or tea. For those who can't or don't want to make their own chai, there are many wonderful spicy varieties to choose from. With or without milk, with or without any sweetening.

Another classic is mint tea. This amazing tradition is especially strong in Morocco. There, tea always means mint tea. It is green tea - usually gunpowder - brewed with fresh mint leaves. Served with quite a bit of sugar, it's a fresh and sweet drink that's perfect for the summer heat.

There are all the other varieties, of course, so to name a few....

Fruity: There are lots to choose from, such as mango, quince or mango. There's also lemon-ginger, which balances the fresh and fruity lemon (or sometimes lime) with the earthy and strong ginger flavor.
